Mild and dry winter. Cold and rainy spring delay sprouting, flowering and fruit set. An excessively hot summer, with vegetative stops slows down ripening and an early autumn with moderate rains and nocturnal contrasts ensure healthy fruit and optimum slow ripening of the grapes.
In Anguix, San Miguel farm, (0.65 ha) planted in a glass 88 years ago, on a field with a notable slope to the north. On the upper part the soil is really compact, red clay. They ripen difficult in difficult years but optimal in normal years. Loose and small clusters with very low yields due to age.
On September, 30th , 2016. Grapes are picked manually, strongly seected, de-temmed. The must ferments by only the yeast of the grapes. Over-all maceration period: twelve days
